8 big tomatoes
200 gr. tuna fish in water
50 gr. drained yoghurt
100 gr. Amarino
250 gr. rice basmati boiled
100 gr. corn
2 cucumber Knossou
2-3 tbsp. anise chopped
Salt & fresh grated pepper
4 tbsp. olive oil


Drain the tuna fish and add 2 tablespoons of oil. Add the rice in abundant salted water and when the rice is brought to room temperature mix with yoghurt, Amarino, corn, anise and the cucumbers Knossou cut into small square pieces. Stir well and add salt and pepper.

Wash the tomatoes, dry them, open them around with a sharp knife by removing the lid. Empty the interior carefully and add salt, leave it upside down to drain. Fill the tomatoes with the mixture and close the lid. Leave them in the fridge for one hour before serving them. Pour the remaining olive oil and fresh grated pepper.
