300 gr soft flour
250 ml lukewarm water
100 gr melted butter
½ tsp. salt
300 gr pariza
200 gr Goat’s gravierino
1 egg
white sesame


Put the flour and salt on the sieve and sift them. Add the butter and the water slowly. Knead well and leave the dough for 15 minutes. Grate cheese and parizaki in thick pieces. Open the phyllo, cut into stripes and fill in with cheese and parizaki. Roll on and close with fork the phyllo wrapped. Brush the tops of each pie with the whisked egg and add sesame seeds. Bake at 180° for 15′.
