500 gr. Basmati Indian rice
1 dry onion
1 cup of peas
1 cup of carrots
2 small zucchini
1 red pepper
1 green pepper
1 cup of corn
1 lt. vegetable broth
2 tbsp.  grated parsley

For the cheese sauce:
2 fresh onions
200 gr. Αmarino
juice & zest of 1 lemon
zest of 1 lime
1 tsp. oregano
1 carrot grated
1 tbsp. fresh spearmint
2 tbsp. olive oil

For the serving:
