½ kg.  mizithra fresh
2 glasses of lukewarm water
½ shot of lemon juice
½ shot of raki
½ shot of olive oil
4-5 glasses of soft flour


Put the 4 glasses of flour on our bench and dig a hole in the middle. Then, pour lemon, raki, oil, salt and slowly water. Mix all the ingredients and knead constantly. After adding all the water, slowly add the flour and mix. It may not need all 5 glasses. When a soft supple and fluffy dough emerges, leave it aside for 15-20 minutes and break the mizithra fresh. You can also add anthotyro to sweeten the effect. Flour our countertop and divide our dough into 8-10 balls, which are cut into thin sheets and then cut into long strips. Put the cheese in the long strips and close. Wrap as a snail and continue until all is finished. Fry in olive oil which is very hot on both sides. Eat them plain or cover them with honey.
