1/2  kg. spinach
1 dry onion
3 fresh onions
1/2 bunch of anise
1/4 cup of olive oil
1 cup of carolina rice
1/2 cup of white wine (moschato)
1 1/2 cups of vegetable broth
1/2 crushed lemon
200 gr. sheep’s and goat’s cheese in brine
salt & pepper


Pour the olive oil with stir fry the onion. Add the rice and mix till they’re golden. Add the onions chopped in washers, mix 3-4 times and quench with the wine. Once the alcohol has evaporated 1 ′, pour the spinach and let it cool down. Add the broth slowly. Hold half of a warm broth cup and place it in the blender with the cheese in brine. Then add the anise to the rice. Add salt & pepper and mix, cover for about 15 minutes on medium heat.In the last 4-5 minutes add the cheese in brine and continue cooking with an open lid on low heat. When ready, squeeze the lemon and extinguish the heat. Allow the food to cool down for 5 minutes and then serve.
