The sweet! Soft and brackish is the fresh cheese with many applications. It is produced from whey cheese, supplemented with sheep’s milk and a few days after cheese-making, placed in carton together with its liquids to keep it for 5-7 days, or in vacuum packing for 30 days in the refrigerator.

A key ingredient in Cretan cuisine is used in many sweet foods, offering the nutritional value of sheep and goat milk combined with a mild flavor.
