1½ kg octopus
1 onion
1 glass olive oil
3 ripe tomatoes grated
½ kg rice carolina
½ glass white wine
salt, pepper
200 gr. Amarino



Clean and wash the octopus. Then, cook with olive oil and onions. After it reaches its boiling point, leave a few minutes and add the wine. Then, add grated tomatoes, salt, pepper and cook for about one hour. Add water in a pan. After the water is boiled, add the rice and cook. Stir and add water if necessary. 3 minutes before we turn the heat off add Amarino and nutmeg. Remove from heat, cover with a clean towel and leave it for 10 minutes. Serve and enjoy!
